Three Sheets opened at the end of 2013 in a room with a lot of history: 372 Elm Street, where Rudy's poured drinks for seventy-six years before moving up to Chapel. It was founded deliberately to keep that spirit going rather than paper over it, and what came out is a gastrodive, which is to say a dive bar that takes the food and the beer list seriously. If you drink at Rudy's on Chapel, this is the other half of the story.
